Would I be able to program in Java?
I am a university student and am hoping to use this for my final 3rd year project?

No, mbed is strictly C++. A Raspberry might run Java. The Espruino (http://www.espruino.com/) runs Javascript (although I am told that has very little to do with Java), but there you have about a factor of 1000 overhead compared to C code.
