Solution for pretty simple wireless audio recording needed, but low jitter/sample rate deviation

We are currently searching for an opportunity to create a low-cost device for wireless (Bluettooh and/or WiFi) audio acquisition. Basically the Bluecreation BC127 seems to be a rather good solution, but we are expecting the fact that the requested sample rate of 44.1khz might jitter in a range (+/-100-150hz) which makes the digital output unusable for our need.

Actually s simple bluetooth headset has all functionalities to fulfill our needs (if the acoustic mic can be replaced by a body sound sensor) except that the sample rate of 44.1khz ist too unstable for our needs.

We need to acquire low-frequency, very low volume machine operatiing noise with the help of a body sound sensor to calculate the machine accuracy on a millisecond base.

Any ideas/hints/assistance are highly appreciated.

I have to mention that we are software guys without any deeper glue of hardware basics and hardware design.

We would also be interested in a partnership to develop some kind of device.

Question relating to:

why not a fast adc (for instance a MCP3208 takes up to 100 ksamples/sec ) and a local processing of the signal ?
